Refreshing Summer Oranges
I use this dressing for green salads with oranges for dinner. I decided I could eliminate the greens and turn it into a breakfast fruit dish. Fresh strawberries and a few frozen or fresh blackberries complete the picture! Refreshing? Mucho!

3 juicy Oranges, peeled and sliced, 1/4 A thick
4 fresh, red strawberries with green stem
20 fresh or frozen blackberries with their own juice
Sliced Almonds or Pine nuts
1 c. softened frozen orange juice concentrate
1 c. Lemon juice
1 c. Canola Oil
1 c. Honey
1/4 c. Apple Cider vinegar
1/4 c. Poppy seeds
2 t. dry Mustard
Arrange 4 orange slices in a half circle on a small plate. Slice part way into strawberry to make it fan into a flower. Place 1 strawberry on each plate. Arrange a few blackberries on top of oranges with a little blackberry juice for color. Sprinkle a few nuts on top of fruit. Mix remaining ingredients together until well blended. Spoon 2 or 3 tablespoons of the sauce on top of fruit. Refrigerate remaining sauce - serve as a dressing for a salad for dinner.
