Sweet Hot Monte Cristo
Ah, the sweet taste of success!  Did I tell you that when I won First Prize in a National Bed and Breakfast Cook-Off for this recipe that 1) I grabbed the guy (a total stranger) sitting next to me, and thought I was going to fall off my chair 2) I was sure that they were going to sing to me "Here she is, Miss America" and I would walk down the aisle with Bert Parks! 3) I called Marty to tell him in the middle of the night, and he was so excited, he made a huge banner to welcome me home, 4) I actually baked this on TV like I was a real chef!  I have to give my Dad, who died in 1993, a lot of credit - he made his own mustards as I was growing up, and now, I put all kinds of spicy mustards in whatever dishes I can - Thanks, Dad!

2 slices sourdough French bread
1 teaspoon sweet hot mustard
2 slices Muenster cheese
2 slices Canadian Bacon
3-4 thin slices of green tart apple
2 eggs, lightly beaten
2 tablespoons low fat milk
2 tablespoons maple syrup
Fresh strawberries
Confectioner's sugar

Spread mustard evenly over 1 slice of bread.  Top with cheese, Canadian bacon, apple and second slice of bread. In a shallow plate, combine eggs and milk.  Dip sandwich into egg mixture; allow to soak for 2 minutes.  Repeat on the other side.  On a no-stick sprayed baking pan, bake sandwiches at 425 on each side for about 10 minutes, or until browned.  Drizzle with maple syrup, sprinkle with confectioner's sugar and garnish with sliced  strawberries.

Makes one sandwich.
